  • Meat: 5 lb beef brisket
  • Rub: 2 tbsp ground coffee 1 tsp cayenne, 1 tsp garlic powder, 1 tsp oregano, 1 tsp black pepper, 1 tsp chipotle paste, 1 tsp oil, 1 tbsp sea salt

Method
 

Instructions
  1. Mix all rub ingredients into a paste. Massage thoroughly into the brisket.
  2. Wrap the brisket tightly in foil and refrigerate overnight.
  3. Cook the foil packet on a grill (indirect heat) or in the oven at 300 degrees F (150 degrees C) for 4-5 hours.
  4. Remove from heat and let rest inside the foil for 1 hour.
  5. Slice against the grain and serve with the accumulated juices.
