Ingredients
  

Main Ingredients
  • 20 juniper berries, crushed
  • 1 1/2 pounds pork shoulder, cubed
  • 1/3 cup olive oil
  • 2 tablespoons onion chopped
  • 1/2 cup white wine
  • 2 tablespoons red wine vinegar
  • 1 ounce dried porcini (soaked)
  • 3 anchovy fillets

Method
 

Instructions
  1. Brown pork in oil. Remove.
  2. Sauté onion. Return meat.
  3. Add wine and vinegar. Simmer.
  4. Add mushrooms, filtered soak water, anchovies, juniper, herbs.
  5. Cover tight. Simmer 1.5 to 2 hours.
  6. Serve.
