A whole veal shank braised slowly until the meat falls off the bone. Served like a ‘giant lollipop’. A spectacular centerpiece dish from Trieste.

Ingredients
  

Main Ingredients
  • 2 whole veal shanks (hind leg)
  • 2 garlic cloves
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 1/3 cup dry white wine
  • 6 flat anchovy fillets

Method
 

Instructions
  1. Loosen meat at narrow end of shank.
  2. Sauté onion in oil/butter. Adds garlic.
  3. Brown shanks well.
  4. Add wine and anchovies. Cook until anchovies dissolve.
  5. Cover loosely and simmer 2 to 2 1/2 hours.
  6. Meat will pull away from bone. Serve with reduced juices.
