- Loosen meat at narrow end of shank.
- Sauté onion in oil/butter. Adds garlic.
- Brown shanks well.
- Add wine and anchovies. Cook until anchovies dissolve.
- Cover loosely and simmer 2 to 2 1/2 hours.
- Meat will pull away from bone. Serve with reduced juices.
