Thai Shredded Chicken Salad

Thai Shredded Chicken Salad

Thai Shredded Chicken Salad is a bright and crunchy dish that comes together quickly using pre-cooked rotisserie chicken. The base combines tender shredded poultry with crisp julienned carrots, broccoli slaw, and fresh green onions. A savory dressing ties everything together, blending creamy peanut butter with rice vinegar, honey, soy sauce, and a touch of red pepper sauce for a gentle kick. It makes an excellent light lunch or a refreshing weeknight dinner when you want something satisfying without turning on the stove. The combination of crisp vegetables and rich peanut dressing delivers a perfect balance of textures and flavors.
