Ingredients
  

Main Ingredients
  • 1/2 pound mozzarella (preferably buffalo), sliced very thin
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 pound veal scaloppine, flattened
  • Salt
  • Black pepper, ground fresh from the mill

Method
 

Instructions
  1. Slice mozzarella thinly.
  2. Brown veal quickly in hot butter and oil. Salt.
  3. Top each piece with cheese. Pepper.
  4. Cover pan briefly to melt cheese. Transfer to platter.
  5. Deglaze pan with 1-2 tbsp water.
  6. Pour juices over meat and serve.
