A classic Italian ‘Spezzatino’. Veal cooked slowly with plum tomatoes and sweet peas. A hearty, one-pot meal.

Ingredients
  

Main Ingredients
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons butter
  • 1 1/2 pounds veal shoulder, cubed
  • Flour
  • 2 tablespoons chopped onion
  • 1 cup canned plum tomatoes, chopped
  • 2 pounds fresh peas (or 10oz frozen)

Method
 

Instructions
  1. Brown dredged veal in butter/oil. Remove.
  2. Sauté onion. Return meat.
  3. Add tomatoes. Cover and simmer 50 mins.
  4. Add peas to pot.
  5. Simmer 1 to 1.5 hours more until veal is tender.
  6. Serve.
