Ingredients

  • 3 tablespoons lime juice (2 to 3 limes)
  • 1 cup water
  • ½ cup sugar
  • 6 cups 1-inch cubes seeded watermelon

Instructions

  1. 1Combine the lime juice, water, and sugar in a 1-quart saucepan. Heat the mixture over low heat for about 5 minutes, stirring occasionally until the sugar completely dissolves. Remove from the heat and let it cool for about 5 minutes.
  2. 2Place the seeded watermelon cubes into a blender or food processor. Blend on high speed for roughly 2 minutes until the fruit is completely smooth. Pour in the cooled lime syrup and blend briefly to combine everything.
  3. 3Transfer the blended watermelon mixture into an ungreased 13x9-inch glass baking dish. Cover the dish and place it in the freezer for 1 hour.
  4. 4Remove the dish from the freezer and scrape the mixture with a fork to break up the ice crystals. Return it to the freezer for at least 3 more hours, scraping the granita every 30 minutes until it develops a fine, icy texture.
