- Sauté onion in oil until translucent. Add garlic, then parsley and wine.
- Add tomatoes. Simmer uncovered 15-20 minutes.
- Add fish. Season with salt and pepper. Cover and cook over medium-low heat.
- Cook whole fish 10 mins, turn, then 8 mins more. Steaks: 5 mins per side.
- Transfer gently to platter, pour sauce over, and serve.
