If you crave the flavor of fish soup but are cooking for fewer people, this method brings the lively taste of 'zuppa di pesce' to a single whole fish or steaks.

Ingredients
  

Main Ingredients
  • A 2 1/2 to 3-pound whole fish (bass, snapper, etc.) OR 1 1/2 to 2 pounds fish steaks
  • 1/4 cup extra virgin olive oil
  • 1/2 cup chopped onion
  • 1 teaspoon chopped garlic
  • 2 tablespoons chopped parsley
  • 1/2 cup dry white wine
  • 3/4 cup canned imported Italian plum tomatoes, chopped, with their juice
  • Salt
  • Black pepper OR chopped hot red chili pepper

Method
 

Instructions
  1. Sauté onion in oil until translucent. Add garlic, then parsley and wine.
  2. Add tomatoes. Simmer uncovered 15-20 minutes.
  3. Add fish. Season with salt and pepper. Cover and cook over medium-low heat.
  4. Cook whole fish 10 mins, turn, then 8 mins more. Steaks: 5 mins per side.
  5. Transfer gently to platter, pour sauce over, and serve.
