"Aio e Oio" Roman Garlic and Oil Sauce

Servings: 4 servings
Course: Main Dish

Ingredients

Main Ingredients
  • 1 lb pasta 455 g
  • Salt
  • 1/3 cup extra virgin olive oil 80 ml
  • 2 tsp garlic chopped very fine (10 ml)
  • Chopped hot red chili pepper to taste
  • 2 Tbsp chopped parsley 30 ml

Equipment

  • Skillet

Method

  1. Cook the pasta in boiling water, salting it more than usual since the sauce itself contains no salt.
  2. While the pasta cooks, put the olive oil, garlic, and chili pepper in a small saucepan over medium-low heat. Stir and cook until the garlic turns a pale gold, and stop before it browns.
  3. Toss the hot drained pasta with the entire contents of the saucepan, turning strands repeatedly to coat evenly. Taste and adjust salt if needed, add parsley, toss once more, and serve immediately.
