  • 9 oz smoked bacon chopped
  • 1 onion finely chopped
  • 3 garlic cloves crushed
  • 2 cans 14oz black beans, drained and rinsed
  • 6 oz cherry tomatoes
  • 3 cups chicken stock
  • 1 tbsp ground cumin
  • 1/2 tsp chipotle paste
  • Salt and pepper
  • Toppings: Avocado slices sour cream, fresh cilantro

Equipment

  • Large soup pot
  • Frying pan
  • Immersion blender (optional)

Method
 

Instructions
  1. Fry the bacon, onion, and garlic in a soup pot until soft and the bacon is sizzling.
  2. Add the black beans, cherry tomatoes, stock, cumin, and chipotle paste.
  3. Simmer uncovered for 2-3 hours. The soup should reduce by half and become thick.
  4. Using an immersion blender, blend slightly to thicken the texture while keeping it chunky.
  5. Fry a little extra bacon until crisp for garnish.
  6. Serve hot, topped with avocado, sour cream, and the crispy bacon.
