Braised Artichokes and Peas

Fresh artichoke hearts and sweet peas slowly braised together in olive oil, onion, and garlic.

Ingredients
  

Main Ingredients
  • 2 large globe artichokes (trimmed into wedges)
  • 1/2 lemon (for rubbing)
  • 2 tablespoons chopped onion
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic
  • 2 pounds fresh peas (or frozen)
  • 1 tablespoon parsley

Method
 

Instructions
  1. Trim artichokes, rub with lemon, cut into wedges.
  2. Sauté onion in oil. Add garlic.
  3. Add artichokes and 1/3 cup water. Cover and simmer 10 mins.
  4. Add peas, parsley, salt, pepper.
  5. Cover and cook until both are tender.
  6. Boil away excess water if needed.
