2 large globe artichokes
1 pound potatoes (wedges)
1/3 cup chopped onion
1/4 cup extra virgin olive oil
1/4 teaspoon garlic
1 tablespoon parsley
Method
Instructions
Trim artichokes. Peel and cut potatoes.
Sauté onion in oil. Add garlic.
Add potatoes, artichokes, parsley, salt, pepper.
Add 1/4 cup water. Cover tightly.
Simmer gently 40 minutes until tender.
Serve.
