Braised Artichokes and Potatoes

Main Ingredients
  • 2 large globe artichokes
  • 1 pound potatoes (wedges)
  • 1/3 cup chopped onion
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon garlic
  • 1 tablespoon parsley

Method
 

Instructions
  1. Trim artichokes. Peel and cut potatoes.
  2. Sauté onion in oil. Add garlic.
  3. Add potatoes, artichokes, parsley, salt, pepper.
  4. Add 1/4 cup water. Cover tightly.
  5. Simmer gently 40 minutes until tender.
  6. Serve.
