Pork chops braised in a unique blend of Marsala and young red wine, accented with fennel seeds and garlic.

Ingredients
  

Main Ingredients
  • 4 pork loin chops
  • 1/2 cup dry Marsala
  • 1/2 cup dry young red wine (Chianti/Barbera)
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic chopped
  • 1/4 teaspoon fennel seeds
  • 1 tablespoon parsley

Method
 

Instructions
  1. Flour and brown chops in oil.
  2. Add garlic, then the wine mixture (wines + tomato paste).
  3. Add fennel seeds.
  4. Cover (ajar) and simmer 1 hour.
  5. Add parsley.
  6. Reduce juices to a glaze.
  7. Pour over chops and serve.
