4 pork loin chops
1/2 cup dry Marsala
1/2 cup dry young red wine (Chianti/Barbera)
1 tablespoon tomato paste
1 teaspoon garlic chopped
1/4 teaspoon fennel seeds
1 tablespoon parsley
Method
Instructions
Flour and brown chops in oil.
Add garlic, then the wine mixture (wines + tomato paste).
Add fennel seeds.
Cover (ajar) and simmer 1 hour.
Add parsley.
Reduce juices to a glaze.
Pour over chops and serve.
