A fragrant twist on the Milanese chop. Garlic infuses the frying oil, and rosemary is added to the breading for a distinct Sicilian flavor.

Main Ingredients
  • 6 veal chops
  • 2 eggs
  • 1 1/2 cups bread crumbs
  • 1 tablespoon chopped fresh rosemary
  • 4 garlic cloves, lightly mashed
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • Salt

Method
 

Instructions
  1. Dip chops in egg.
  2. Sprinkle with rosemary BEFORE coating in crumbs.
  3. Press into bread crumbs.
  4. Fry garlic in butter/oil until brown, then remove.
  5. Fry chops in the scented oil until golden.
  6. Salt and serve.
