Brutti Ma Buoni (Ugly but Good Cookies)

Ingredients
  

Main Ingredients
  • 11 oz almonds (blanched)
  • 1 cup + 3 tbsp sugar
  • 4 egg whites
  • Salt
  • 1/2 tsp vanilla extract

Method
 

Instructions
  1. Pulverize almonds with sugar.
  2. Whip egg whites to stiff peaks.
  3. Fold whites into almond/sugar mix with vanilla.
  4. Scoop irregular mounds onto buttered baking sheet.
  5. Bake at 300°F for 30 minutes.
  6. Cool on rack.
