  • 2 cups self-rising flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1 cup buttermilk
  • 2 eggs
  • 4 tbsp melted butter cooled
  • Butter for frying
  • Maple syrup and berries for serving

Method
 

Instructions
  1. Whisk the flour, sugar, and baking powder in a large bowl.
  2. In a separate jug, whisk the buttermilk, eggs, and melted butter.
  3. Pour the wet ingredients into the dry and whisk gently until just combined (lumps are fine).
  4. Heat a little butter in a skillet. Pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles appear and pop on the surface, then flip and cook for 1-2 minutes more.
  6. Serve stacked with butter, syrup, and berries.
