- Pulverize almonds with sugar (or chop fine).
- Mix with yolks, flour, salt, lemon peel, and lemon juice.
- Knead 8-10 mins to form smooth dough.
- Roll out to 1/4 inch thick. Cut into 2-inch rounds.
- Brush with beaten egg.
- Bake at 400°F for 10 minutes.
- Cool on rack.
