Ingredients
  

Main Ingredients
  • A 3- to 4-pound chicken, cut into 6 to 8 pieces
  • 2 tablespoons vegetable oil
  • Flour, spread on a plate
  • Salt & Black pepper
  • 1/3 cup onion sliced very thin
  • 2/3 cup dry white wine
  • 1 sweet yellow or red bell pepper, julienned
  • 1 carrot, peeled and sliced thin
  • 1/2 stalk celery sliced thin
  • 1 garlic clove, chopped fine
  • 2/3 cup canned imported Italian plum tomatoes, chopped coarse

Method
 

Instructions
  1. Dredge chicken in flour. Brown in oil. Remove and season.
  2. Sauté onion until deep gold. Add wine and deglaze pan.
  3. Return chicken legs/thighs to pan. Add all vegetables and tomatoes.
  4. Cover and simmer 40 minutes.
  5. Add chicken breasts. Cook 10 minutes more until tender.
  6. Serve with sauce.
