Collard Greens Agrodolce

Agrodolce means "sour-sweet" in Italian, and this glaze works wonders on bitter collard greens. Maple syrup and balsamic vinegar create a sticky sauce that clings to the greens and crispy pancetta.

Main Ingredients
  • Greens: 10oz collard greens shredded, 3/4 cup chicken stock
  • Flavor: 4.5oz pancetta diced, 1 onion, 2 garlic cloves
  • Glaze: 2 tbsp balsamic vinegar 1 tbsp maple syrup

Method
 

Instructions
  1. Fry onion and pancetta in a skillet until crisp. Add garlic.
  2. Add shredded greens and stock. Cover and simmer 5 mins to wilt.
  3. Uncover and cook on high until the liquid evaporates.
  4. Stir in balsamic vinegar and maple syrup.
  5. Cook for 1 minute until the greens are coated in a glossy glaze.
