Crema Pasticcera (Italian Custard Cream)

Ingredients
  

Main Ingredients
  • 4 egg yolks
  • 3/4 cup confectioners' sugar
  • 1/4 cup flour
  • 2 cups milk
  • Lemon peel

Method
 

Instructions
  1. Beat yolks and sugar until pale.
  2. Add flour gradually.
  3. Bring milk to brink of boil.
  4. Add hot milk slowly to yolks, stirring constantly.
  5. Cook over low heat (or double boiler) for 5 mins, stirring, until it coats spoon.
  6. Cool in ice bath. Stir in lemon peel.
  7. Refrigerate.
