Ingredients
  

Main Ingredients
  • 3 pounds eggplant (cubed)
  • 1/3 cup extra virgin olive oil
  • 1-2 garlic cloves
  • 2 tablespoons chopped parsley
  • Salt & Pepper

Method
 

Instructions
  1. Peel and cube eggplant (1 inch). Salt and steep 1 hour. Dry.
  2. Sauté garlic in oil until gold. Remove garlic.
  3. Add eggplant. Cook on medium-high.
  4. Let oil absorb and then release (don't add more oil).
  5. Add parsley and pepper.
  6. Cook until very tender (~35 mins total).
