- Peel and cube eggplant (1 inch). Salt and steep 1 hour. Dry.
- Sauté garlic in oil until gold. Remove garlic.
- Add eggplant. Cook on medium-high.
- Let oil absorb and then release (don't add more oil).
- Add parsley and pepper.
- Cook until very tender (~35 mins total).
