Gratin of Artichokes, Potatoes, and Onions

Pre-cooked artichokes baked with raw potato slices and caramelized onions. A meltingly tender gratin.

Ingredients
  

Main Ingredients
  • 2 large artichokes
  • 3 medium potatoes (sliced chip-thin)
  • 1 cup onion (sliced thin)
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan

Method
 

Instructions
  1. Cook onions in butter until soft/gold.
  2. Add sliced artichokes and water. Braise 15 mins.
  3. Toss in raw potato slices.
  4. Transfer to baking dish. Dot with butter.
  5. Bake 400°F for 15 mins.
  6. Stir. Bake 15 more mins.
  7. Top with Parmesan. Bake until crusty.
  8. Serve.
