Grilled Shrimp Skewers

Shrimp coated in olive oil-soaked bread crumbs stay incredibly juicy on the grill. Skewered tightly and cooked briefly, they form a thin, golden crust.

  • 2 pounds medium shrimp, unshelled weight (900 g)
  • 3 1/2 tablespoons extra virgin olive oil (50 ml)
  • 3 1/2 tablespoons vegetable oil (50 ml)
  • 2/3 cup fine, dry, unflavored bread crumbs (160 ml)
  • 1/2 teaspoon garlic chopped very fine
  • 2 teaspoons parsley chopped very fine
  • Salt
  • Black pepper, ground fresh from the mill
  • Skewers

Method
 

Instructions
  1. Shell and devein shrimp. Wash and dry well.
  2. Put shrimp in a bowl. Add enough of the oils (equal parts) and bread crumbs to coat evenly but lightly.
  3. Add garlic, parsley, salt, and pepper. Toss to coat. Steep 20 to 30 minutes at room temperature.
  4. Preheat broiler or grill.
  5. Skewer shrimp tightly, curling each so the skewer goes through three points (prevents slipping).
  6. Cook briefly close to heat, about 2 minutes per side, until a thin golden crust forms. Serve piping hot.
