  • Base: 4 large flour tortillas 3/4 cup grated Cheddar, 4 eggs
  • Beans: 1 can 15oz black beans, 1 tsp smoked paprika
  • Pico de Gallo: 3 tomatoes 1 jalapeño, red onion, cilantro, lime juice
  • Topping: Avocado slices

Method
 

Instructions
  1. Mix Pico de Gallo ingredients (tomatoes, onion, jalapeno, cilantro, lime). Warm the beans with paprika.
  2. Heat a tortilla in a pan. Make a ring of cheese on it; crack an egg into the center.
  3. Cover and cook 3-4 mins until egg sets and cheese melts. Flip carefully if desired.
  4. Serve topped with warm beans, salsa, and avocado slices.
