Lamb cubes stewed 'a crudo' with garlic and herbs. Finished with strips of ham and sweet red bell pepper.

Ingredients
  

Main Ingredients
  • 1/4 cup vegetable oil
  • 3 pounds lamb shoulder, cubed
  • 2 garlic cloves
  • Rosemary & Sage
  • 1/2 cup dry white wine
  • 1 red bell pepper (peeled and stripped)
  • 1/4 pound ham strips

Method
 

Instructions
  1. Put oil, lamb, garlic, herbs in pan. Heat and brown (15 mins).
  2. Add wine, evaporate briefly.
  3. Cover and simmer 1.5 hours.
  4. Add pepper strips and ham.
  5. Cook 10-15 mins more until pepper is soft.
  6. Serve.
