A quintessential summer dessert. The cherry filling is thickened slightly with flour to ensure it slices perfectly, while the woven lattice crust allows steam to escape and looks beautiful.

Ingredients
  

Main Ingredients
  • Crust: 2 cups flour 1/2 cup shortening, 5 tbsp butter, 1/2 tsp salt
  • Filling: 1 lb 2oz cherries pitted, 1 cup sugar, 1/4 cup flour, 1/4 tsp almond extract
  • Glaze: 1 egg beaten, sugar for sprinkling

Method
 

Instructions
  1. Make pastry by rubbing fats into flour and binding with water. Chill.
  2. Roll out 2/3 of the dough to line the pie dish.
  3. Mix pitted cherries, sugar, flour, and almond extract. Fill the pie shell.
  4. Cut remaining dough into strips and weave a lattice over the top.
  5. Brush with egg glaze and bake at 400 degrees F (200 degrees C) for 20-25 mins.
