Meatballs and Tomatoes

Soft, tender meatballs made with beef, parmesan, and a bread-milk panade, simmered in a simple tomato sauce.

Ingredients
  

Main Ingredients
  • 1 slice white bread, crust removed
  • 1/3 cup milk
  • 1 pound ground beef (chuck)
  • 1 tablespoon onion, chopped fine
  • 1 tablespoon parsley, chopped
  • 1 egg
  • 3 tablespoons grated parmesan
  • Nutmeg
  • Bread crumbs
  • 1 cup chopped tomatoes

Method
 

Instructions
  1. Soak bread in milk, mash to pulp. Cool.
  2. Mix beef, panade, onion, parsley, egg, parmesan, nutmeg, salt, pepper.
  3. Shape into 1-inch balls. Roll in bread crumbs.
  4. Brown in oil. Drain excess fat.
  5. Add tomatoes. Cover and simmer 20-25 mins.
  6. Serve.
