  • Pork: 2 lb pork tenderloin
  • Mole: 2 tbsp dark chocolate 2 cans tomatoes, 1 tsp chipotle paste, pinch cinnamon, pinch cayenne, pinch sugar, onion, garlic
  • Assembly: 4 large tortillas 1 cup Cheddar/Jack cheese

Method
 

Instructions
  1. Make the sauce by simmering sautéed aromatics with tomatoes, chocolate, and spices.
  2. Sear the pork, then submerge it in the sauce and simmer for 1 hour.
  3. Shred the pork. Fill tortillas with meat and cheese, rolling them tight.
  4. Place in a baking dish, cover with remaining sauce and cheese.
  5. Bake at 350 degrees F (180 degrees C) for 25 mins.
