- Preheat oven to 375°F (190°C). Wash and dry chicken.
- Put garlic, salt, pepper, and one rosemary sprig inside cavity.
- Rub skin with oil, salt, pepper, and remaining rosemary.
- Roast for about 1 hour, turning and basting every 15 minutes.
- Deglaze roasting pan with water to make a quick sauce.
- Pour sauce over chicken and serve.
