Sirloin steaks pan-broiled and served with a spicy, savory sauce of Marsala wine, garlic, fennel seeds, and chili pepper.

Ingredients
  

Main Ingredients
  • 4 sirloin steaks, 3/4 inch thick
  • Extra virgin olive oil
  • 1/2 cup dry Marsala wine
  • 1/2 cup dry red wine
  • 1 1/2 teaspoons chopped garlic
  • 1 teaspoon fennel seeds
  • 1 tablespoon tomato paste diluted in 2 tbsp water
  • Chopped hot red chili pepper
  • 2 tablespoons chopped parsley

Method
 

Instructions
  1. Sear steaks in hot oil (3 mins side 1, 2 mins side 2). Remove and salt.
  2. Add wines to pan. Boil 30 seconds, scraping bottom.
  3. Add garlic, fennel, diluted tomato paste, chili. Cook to syrup.
  4. Return steaks, coat with sauce.
  5. Serve topped with parsley.
