Pan-Roasted Diced Potatoes

Small diced potatoes fried twice once to cook through, twice to crisp up perfectly.

  • 1 1/2 pounds boiling potatoes
  • Vegetable oil
  • Salt

Method
 

Instructions
  1. Peel and dice potatoes into 1/2-inch cubes. Wash and dry well.
  2. Start in hot oil, then lower heat. Cook until tender but pale. Remove and cool.
  3. Leave oil in pan.
  4. Just before serving, heat oil to high.
  5. Return potatoes and fry until light nut-brown crust forms.
  6. Salt and serve.
