An old recipe from Lombardy. Lamb is slow-cooked without browning, alongside vegetables and juniper berries, developing a rich, mellow flavor.

Ingredients
  

Main Ingredients
  • 2 1/2 pounds lamb shoulder, cut up
  • 1 tablespoon chopped carrot
  • 2 tablespoons chopped onion
  • 1 tablespoon chopped celery
  • 1 cup dry white wine
  • 2 garlic cloves
  • 1 1/2 teaspoons juniper berries, crushed
  • Rosemary

Method
 

Instructions
  1. Put all ingredients in a pot (no oil/butter!).
  2. Cover and cook on medium-low for 2 hours.
  3. Set cover ajar, cook 1.5 hours more.
  4. Uncover to reduce liquid if needed.
  5. Spoon off fat.
  6. Serve.
