2 1/2 pounds lamb shoulder, cut up
1 tablespoon chopped carrot
2 tablespoons chopped onion
1 tablespoon chopped celery
1 cup dry white wine
2 garlic cloves
1 1/2 teaspoons juniper berries, crushed
Rosemary
Method
Instructions
Put all ingredients in a pot (no oil/butter!).
Cover and cook on medium-low for 2 hours.
Set cover ajar, cook 1.5 hours more.
Uncover to reduce liquid if needed.
Spoon off fat.
Serve.
