  • Filling: 8 ripe peaches peeled/quartered, 1/4 cup sugar, 1 tsp cornstarch, juice of 1/2 lemon
  • Topping: 2 cups self-rising flour 1/3 cup sugar, 5 tbsp butter, 1 egg, 1/2 cup buttermilk, cinnamon

Method
 

Instructions
  1. Simmer peaches with sugar and water. Thicken the liquid with cornstarch and lemon juice.
  2. Pour the fruit mixture into a baking dish.
  3. Making the topping: rub butter into flour/sugar, then mix in buttermilk and egg to form a soft dough.
  4. Drop heaped spoonfuls of dough over the hot fruit (leave gaps for steam).
  5. Bake at 375 degrees F (190 degrees C) for 25-30 mins until golden.
