Fruit: 4 pears
approx 14oz/400g, peeled and cored
Liquid: 3/4 cup apple cider vinegar
1/2 cup water
Flavor: 1/2 cup light brown sugar
1/2 tbsp ground cardamom, pinch salt

Instructions
Combine all ingredients in a saucepan.
Simmer uncovered for 1 hour until pears are very tender and liquid reduces.
Cool completely.
Puree until silky smooth.
Store in the fridge for up to 2 weeks.
