Poached calf's brains (prepared as in previous recipe)
Extra virgin olive oil
Freshly squeezed lemon juice
Salt & Coarsely ground black pepper
Method
Instructions
Poach brains as described in 'Fried Calf's Brains'.
Drain and cool partially (do not refrigerate).
Slice thin while still warm.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Serve at once.
