Pork Loin Braised in Milk, Bolognese Style

Perhaps the greatest pork dish in Italian cuisine. Pork loin braised slowly in milk, which transforms into golden, nutty clusters of delicious sauce.

Ingredients
  

Main Ingredients
  • 1 tablespoon butter
  • 2 tablespoons vegetable oil
  • 2 1/2 pounds pork loin roast (or Boston butt)
  • 2 1/2 cups whole milk
  • Salt & Black pepper

Method
 

Instructions
  1. Brown pork in butter/oil.
  2. Add 1 cup milk. Simmer uncovered 1 hour so it thickens.
  3. Add 1 cup milk. Cover and simmer 30 mins.
  4. Set lid ajar. Add remaining milk gradually.
  5. Cook until meat is tender and milk forms dark brown clusters.
  6. Remove fat. Deglaze pan with water.
  7. Serve pork with the curds/sauce.
