1 cup dried black-eyed peas (soaked)
1 pound mild pork sausage
1 cup chopped tomatoes
1/3 cup chopped carrot
1/3 cup chopped celery
2 tablespoons chopped onion
1/4 teaspoon garlic
Method
Instructions
Sauté onion, garlic, carrot, celery in oil.
Add tomatoes. Simmer 20 mins.
Add sausages (pierced). Cook 15 mins.
Add drained peas and water to cover.
Cover and simmer 1.5 hours until peas are tender.
Serve.
