This potato side dish is a showstopper. By using a mix of sweet, purple, and gold potatoes, you get beautiful colorful layers. Baked in a garlic-infused cream and cheddar cheese, it tastes as good as it looks.

  • Base: 2 lb mixed potatoes Sweet, Purple, Yukon Gold
  • Sauce: 2 cups heavy cream 4 garlic cloves (crushed)
  • Cheese: 2 cups grated Cheddar
  • Seasoning: Salt black pepper, pinch red pepper flakes

Method
 

Instructions
  1. Slice all potatoes thinly (leaving skins on adds color and texture).
  2. Bring cream and crushed garlic to a boil in a saucepan; remove from heat.
  3. Layer potatoes and cheese in a baking dish, seasoning each layer.
  4. Pour the hot garlic cream carefully over the potatoes.
  5. Bake at 350 degrees F (180 degrees C) for 45 mins until tender and bubbling.
