Roast Chicken with Lemons

Perhaps the simplest and most celebrated roast chicken recipe. Just a whole bird and two lemons create a magically self-basting, juicy roast.

Ingredients

  • A 3- to 4-pound chicken
  • Salt
  • Black pepper, ground fresh from the mill
  • 2 rather small lemons

Method
 

Instructions
  1. Preheat oven to 350°F (180°C). Wash and dry chicken.
  2. Salt and pepper chicken inside and out.
  3. Puncture lemons all over (at least 20 times). Place inside cavity. Close opening.
  4. Roast breast down for 30 minutes.
  5. Turn breast up. Roast 30-35 minutes.
  6. Increase heat to 400°F (200°C). Roast 20 minutes more.
  7. Serve whole. Do not squeeze lemons, but use the juices that run out.
