Instructions
- Preheat oven to 350°F (180°C). Wash and dry chicken.
- Salt and pepper chicken inside and out.
- Puncture lemons all over (at least 20 times). Place inside cavity. Close opening.
- Roast breast down for 30 minutes.
- Turn breast up. Roast 30-35 minutes.
- Increase heat to 400°F (200°C). Roast 20 minutes more.
- Serve whole. Do not squeeze lemons, but use the juices that run out.
