A simple, fragrant roast lamb offering from Emilia-Romagna. Browned with garlic and rosemary, then slow-braised in white wine.

  • 2 to 2 1/2 pounds spring lamb (shoulder)
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 3 whole garlic cloves
  • Fresh rosemary sprig
  • 2/3 cup dry white wine

Method
 

Instructions
  1. Brown lamb with garlic and rosemary in butter/oil.
  2. Add wine, simmer briskly.
  3. Cover (ajar) and cook gently 1.5 to 2 hours until falling off bone.
  4. Transfer lamb to platter.
  5. Deglaze pan with 2 tbsp water.
  6. Pour juices over lamb.
