2 dozen lamb kidneys
1/4 cup extra virgin olive oil
3 tablespoons chopped onion
1/2 teaspoon chopped garlic
3 tablespoons chopped parsley
3/4 cup white wine mixed with 1/2 tsp cornstarch
Method
Instructions
Soak kidneys. Slice thin.
Sauté onion and garlic in oil.
Add parsley and kidneys. Stir-fry rapidly.
Remove kidneys.
Add wine/cornstarch mixture to pan. Thicken/scrape.
Return kidneys to coat.
Serve.
