Sautéed Lamb Kidneys with Onion, Garlic, and White Wine

Lamb kidneys flash-cooked with garlic and parsley, finished with a white wine glaze.

  • 2 dozen lamb kidneys
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons chopped onion
  • 1/2 teaspoon chopped garlic
  • 3 tablespoons chopped parsley
  • 3/4 cup white wine mixed with 1/2 tsp cornstarch

Method
 

Instructions
  1. Soak kidneys. Slice thin.
  2. Sauté onion and garlic in oil.
  3. Add parsley and kidneys. Stir-fry rapidly.
  4. Remove kidneys.
  5. Add wine/cornstarch mixture to pan. Thicken/scrape.
  6. Return kidneys to coat.
  7. Serve.
