Sautéed Veal Chops with Sage and White Wine

Veal loin chops are sautéed with fresh sage leaves and finished with a white wine reduction. A simple yet elegant preparation.

Main Ingredients
  • 3 tablespoons vegetable oil
  • 4 veal loin chops
  • Flour
  • 12 dried sage leaves (fresh preferred)
  • Salt & Black pepper
  • 1/3 cup dry white wine
  • 1 tablespoon butter

Method
 

Instructions
  1. Dredge chops in flour.
  2. Sauté in oil with sage leaves until rosy pink (approx 8 mins). Remove.
  3. Add wine to pan, reduce to syrup.
  4. Swirl in butter.
  5. Return chops to coat in glaze.
  6. Serve immediately.
