Veg: 5 green tomatoes
1 green pepper, 1 red pepper, 1 red onion, 1/2 head green cabbage (all chopped/shredded)
Brine: 2.5 cups white vinegar
1 cup light brown sugar, 3 tbsp sea salt (total)
Spice: 1 tbsp mustard seeds
1 tsp celery seeds, 1 tsp chili flakes

Instructions
Mix chopped veggies with salt and chill overnight.
Drain veggies well.
Simmer brine ingredients.
Add veggies and cook 15 mins.
Pack into sterilized jars.
