  • 2 1/2 pounds small/medium whole squid (1.1 kg) OR 2 pounds cleaned rings
  • 1 1/2 tablespoons onion chopped very fine
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons garlic chopped fine
  • 1 tablespoon chopped parsley
  • 3/4 cup tomatoes, peeled/chopped OR canned plum tomatoes
  • Salt
  • Black pepper, ground fresh from the mill
  • 2 pounds unshelled fresh peas OR 1 ten-ounce package frozen peas

Method
 

Instructions
  1. Sauté onion in oil. Add garlic, then parsley, then tomatoes. Simmer 10 mins.
  2. Add squid. Cover and simmer 35-40 minutes.
  3. Add peas (fresh need ~20 mins, frozen ~4 mins). Cook until tender.
  4. Season with salt and pepper.
  5. Serve promptly.
