Strawberries and Cream Whoopie Pies

Part cake, part cookie, these whoopie pies are a fun, messy treat. The chocolate cake rounds are kept soft with Greek yogurt, sandwiched together with fresh whipped cream and strawberry slices.

Ingredients
  

Main Ingredients
  • Batter: 3/4 cup butter 3/4 cup light brown sugar, 1 egg, 1.75 cups self-rising flour, 1 cup cocoa, 3/4 cup milk, 2 tbsp Greek yogurt
  • Filling: 3/4 cup heavy cream whipped, 9oz strawberries (sliced)

Equipment

  • Baking sheets
  • Mixer
  • Wire rack

Method
 

Instructions
  1. Cream butter and sugar, add egg. Alternately add dry ingredients and milk. Fold in yogurt.
  2. Spoon mounds of batter onto baking sheets and smooth tops.
  3. Bake at 350 degrees F (180 degrees C) for 12 mins. Cool completely.
  4. Whip the heavy cream.
  5. Sandwich two cakes together with cream and strawberry slices.
