Treviso Radicchio with Bacon

Ingredients
  

Main Ingredients
  • 1 1/2 pounds Treviso radicchio (or mix with endive)
  • 1 tablespoon extra virgin olive oil
  • 1/4 pound bacon (cut into strips)
  • Salt & Pepper

Method
 

Instructions
  1. Trim radicchio root, cut lengthwise into halves or quarters. Wash and dry.
  2. Sauté bacon in oil until fat renders (don't crisp).
  3. Add radicchio, toss to coat.
  4. Cover and cook on low for 25-30 mins until tender.
  5. Season with salt and pepper.
  6. Serve warm.
