Veal Scaloppine with Lemon and Parsley

Veal scaloppine sautéed in butter and finished with fresh lemon juice and parsley. Light, bright, and incredibly fast to prepare.

Main Ingredients
  • 1 pound veal scaloppine, flattened
  • Flour
  • 1 tablespoon vegetable oil
  • 3 tablespoons butter
  • Salt & Black pepper
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons parsley chopped very fine
  • 1/2 lemon, sliced thin

Method
 

Instructions
  1. Dredge veal in flour. Brown in oil and 2 tbsp butter. Remove.
  2. Off heat, add lemon juice, scrape pan.
  3. Swirl in remaining 1 tbsp butter and parsley.
  4. Return veal to pan, turn quickly to coat.
  5. Serve garnished with lemon slices.
