  • 1 1/4 cups milk
  • 5 tbsp butter melted
  • 2 eggs separated
  • 1 tsp vanilla extract
  • 4 slices smoked bacon
  • 1/2 cup maple syrup

Method
 

Instructions
  1. Whisk the flour, cornmeal, baking powder, and sugar together.
  2. In another bowl, mix the milk, melted butter, egg yolks, and vanilla.
  3. Combine the wet and dry ingredients. Whisk the egg whites to soft peaks and fold into the batter.
  4. Cook portions of the batter in a hot waffle iron until golden.
  5. Meanwhile, fry the bacon until crisp, then crumble it.
  6. Warm the maple syrup in a pan and stir in the bacon bits.
  7. Serve the waffles hot with the warm bacon syrup.
