Main Ingredients
  • 4 egg yolks
  • 1/4 cup sugar
  • 1/2 cup dry Marsala wine

Method
 

Instructions
  1. Whip yolks and sugar in double boiler until pale.
  2. Place over simmering water.
  3. Add Marsala, beating constantly.
  4. Cook, whisking, until mixture swells into a soft, frothy mass (approx 15 mins).
  5. Serve warm in cups or over fruit.
